Every business should pay attention to the times that best suit their specific clients/customers/patients. I encountered a cafe and a wine bar in Scottsdale that created a unique fusion. From 6 a.m. to approximately 2 p.m., they ran the cafe, and at 12 p.m., the wine bar opened. I thought this was a great use of time and space. Coffee after lunch is not as popular as in the morning, so instead of closing at 2pm, the business transitions to suit its customers' needs.
